Fall will be in before we know it and you know what that means.... crock pot season! Kris and I have been doing Go Figure for awhile now and it is by far the best weight loss program I have ever done. It works and you eat real food. I am sure you have heard us talk about it and we are so happy with our results! People ask us all the time if is it hard and the answer is no! They help you every step of the way and that includes meal ideas. This chili is by far my favorite and believe me you would never know that it is made of what it is! I have made this more times than I can count and everyone who has ate it had no idea what was in it and how good it is for them! (Kaitlyn-1 boyfriend-0 friends-0) If love chili and want to try a healthy spin on it you have to try this! Here is a super yummy and easy Veggie Chili recipe for these cold winter days...

What you will need:

Cauliflower - Chopped...
Green and Yellow Peppers - Chopped
Onion - Chopped
2 Tblsp Garlic - Chopped
3 Small Zucchinis - Cubed
1-2 lbs of Hamburger
2 Large Fresh Tomatoes - Chopped
2 Small Cans of tomato Sauce
Chili Powder, Cumin and Salt and Pepper to your taste.
and Water to Cover Ingredients

Instructions:

1.In your seasoned skillet or 5-6 quart large cast iron pot, brown beef and garlic. Cook over medium heat until beef is thoroughly cooked and browned. Drain off excess fat, set aside.
2.Add oil, onions, cauliflower, green and yellow peppers and seasonings to the skillet and cook over medium high heat for about 5-7 minutes. Once onions are golden add zucchinis and cook for 2 minutes making sure you stir everything well.
3.Add cooked beef back into the pot, tomatoes, tomato sauce, and stir well. Bring everything to a boil, stirring frequently, reduce heat and simmer for 20 minutes.
4.Check on the amazing mixture every so often and stir. Serve immediately and enjoy.

One of the reasons I love this recipe is because I get my chili fix without any grains. That’s right, full flavor and no grains. It tastes amazing and follows the rules of the program

P.s you don't have to put it in the crock pot but that is the way I love it!
