The kids loved making Easter eggs again this year and once again it seems like we made way too many hard boiled eggs. Everybody loves coloring them so I boiled just shy of 50. Here's the first of two batches.

While everyone at my house LOVES dying eggs, not everyone seems to love eating them. And honestly, how many hard-boiled eggs can a person eat? They do get a little dry. I'll grab a couple in the morning to bring to work or whatever and the kids might eat one or two for a quick breakfast snack, but it's not like we're going to sit down and have a big plate of cold, hard-boiled eggs for dinner.

Yesterday I made egg salad sandwiches. That used about 8 eggs. I guess I could make deviled eggs. That will use up another dozen or so eggs. So... what to do with all the rest of them before they spoil?

Here are five ideas to utilize all those hard-boiled eggs:

  1. Pickled Eggs. Remember before all the bars were closed due to COVID-19 and  you could buy an egg from one of those big jars of picked eggs on the bar shelf? They're actually pretty tasty. This recipe for Red Wine Vinegar Pickled eggs is not exactly the same as pickled eggs at the bar, but it is fairly simple and doesn't require a ton of ingredients. Plus it turns the eggs a cool red color!
  2. Braised Soy Sauce Eggs. Give your leftover hard-boiled eggs an Asian twist with this easy recipe for Chinese Braised Soy Sauce Eggs. Other than eggs, it needs about 5 other ingredients. This recipe also turns your eggs a different color. A not-so-cool brownish color.
  3. Cobb Salad. Sure, eggs are more like a garnish on an awesome Cobb Salad, but you probably already have some leftover ham too. Ham + eggs + a few other salad items = a great way to use up some eggs. You've probably been packing on extra weight with "the COVID-15" so a salad is likely a good idea.
  4. Asparagus with Egg Mimosa.  What?? An egg mimosa?! That sounds gross! It's not what you think though. This recipe features steamed asparagus sprinkled with crumbled hard-boiled eggs and a homemade vinaigrette. It's simple (just six ingredients) and is also pretty healthy. I think it would pair well with champagne and orange juice.
  5. Collard Greens & Potato Salad. Here's another healthy salad that you can feel good about eating and will use about 8 hard boiled eggs. The recipe actually calls for quail eggs... Where in the hell am I supposed to find quail eggs? I'm guessing chicken eggs will work just fine. It also calls for blue potatoes and bacon, but I bet you can freestyle a little and just use regular potatoes and leftover ham.

If cooking is just too much to handle you can always feed them to your dog. The American Kennel Club says hard-boiled eggs make excellent dog treats. Be sure to peel them first.
