I love carbs. Pasta, pizza, bread, potatoes... you name it. And because your body craves carbs like crack cocaine, it's tough to work them out of your diet. We've been trying to minimize carbs in our family meals, not necessarily for weight loss (although that's always a plus), but because fairly recently my spouse has acquired diabetes. And carbs make those pesky blood sugars go crazy.

I do most of the cooking and it hasn't been easy coming up with dinner recipes. With a big family and a tight food budget, our normal diet traditionally included lots of pasta and potatoes. Filling, cheap food.  I know, I know... Pinterest is chock full on "easy low-carb dinners".  It seems like EVERY SINGLE ONE OF THEM is some variation of chicken and vegetables. I don't even really like chicken that much. Ugh. The other night I made the side dish in the picture. Red cabbage, onions, peppers and garlic, sauteed until tender with olive oil and butter and salt. It was really tasty, but not something I can eat every day.
